Make It Happen
Step 1
Preheat the oven to 325°F. Prepare four 8-inch round cake pans by spraying them with cooking spray.
Step 2
Take 10 cubes of the cookie dough and place them in one of the prepared cake pans. Flatten the dough down evenly to ensure a consistent bake. Repeat with the remaining three cake pans.
Step 3
Bake for 15-20 minutes, or until the cookies are golden brown. Carefully, remove the cookie cakes from the pans and place them on a wire rack. Let them cool completely.
Step 4
While the cookies are baking and cooling, prepare the cream cheese frosting. In a mixing bowl, combine the softened cream cheese and butter. Beat on high speed until the mixture is smooth and creamy.
Step 5
Add vanilla extract and a pinch of salt to your mixing bowl and mix until well combined. Next, gradually add the powdered sugar to the mixture, beating on low speed until the sugar is moistened. Then, beat for a few minutes on high speed, scraping down the sides and bottom of the bowl as needed until the frosting is smooth and creamy.
Step 6
Once the cookie cake layers are completely cool, assemble your cake. Start with one cookie layer then add a generous helping of cream cheese frosting on top and spread evenly. Continue to alternate between cookies and cream cheese frosting until all the cookie layers are stacked.
Step 7
Once the layers are stacked, use the remaining cream cheese frosting to frost the top of the cake. You can decorate this cake for all your upcoming celebrations by adding chocolate chips, sprinkles, candies, or hot fudge.
