Ingredients

  • 18 Wooden Spoon® Triple Chocolate Cookie Dough cubes
  • 3/4 c. caramel bits
  • 1 tsp. heavy whipping cream
  • Pecans, finely chopped
  • 2, 4 oz. semi-sweet chocolate bars, finely chopped
  • 1 c. (8 oz.) heavy cream or heavy whipping cream
  • 1 pkg. chocolate candy melts

Make It Happen

Step 1

Preheat the oven to 325°F. Break and place the cookie dough cubes 2” apart on a greased baking sheet. Bake 13-15 minutes or until the edges are slightly crisp. Remove from cookie sheet and transfer to cooling racks. Let cool completely before transferring to a food processor. Blend until they resemble fine crumbs. Set them aside.

Step 2

Place the chopped semi-sweet chocolate bars in a medium-sized, heat-proof bowl. Heat the 1 c. heavy cream in a small saucepan over medium heat until it begins to gently simmer. Be careful not to let it boil. Pour the heated cream over the chopped chocolate and let it sit for 2-3 minutes to soften the chocolate.

Step 3

Use a metal spoon or small rubber spatula to slowly stir the chocolate and cream mixture until completely combined and all the chocolate has melted. Refrigerate the ganache until it thickens.

Step 4

Gradually add portions of the thickened chocolate ganache into the finely blended cookie mixture until it sticks together enough to form balls. Use a tablespoon to scoop the cookie mixture and roll it into balls. Then, roll each ball into a bowl of finely chopped pecans until fully coated.

Step 5

Use a measuring spoon to gently press an indentation (or “thumbprint”) in the center of each cookie ball.

Step 6

In a microwave-safe bowl, combine the caramel bits and 1 tsp. heavy whipping cream. Microwave for 1-2 minutes in 15-20 second intervals, stirring well after each interval until the caramel is fully melted.

Step 7

Spoon a small amount of the melted caramel into the indents of each cookie. Place the cookies in the freezer until the caramel filling cools and sets.

Step 8

Melt the chocolate candy according to package directions. Place the melted chocolate in a piping bag or resealable food storage bag and cut off a small corner at the bottom. Drizzle the melted chocolate over the tops of the cookies in a decorative pattern.

Step 9

Let the cookies set before sharing at your next neighborhood barbeque, holiday get together, or family game night.

Storage Information

Turtle Thumbprint Cookies can be stored in an airtight container at room temperature for 3-4 days.
