Introducing the latest creation from the Wooden Spoon® Cookie Dough kitchen: Triple Chocolate Mint Brookies! Brookies are rich, fudgy, decadent bars made from a mixture of brownies and cookie dough. And we’re giving this dessert combo a makeover for St. Patrick’s Day.

First, we start with our rich, indulging Triple Chocolate Cookie Dough which makes up the “brownie” part of our brookies. Then, we top it with homemade mint chocolate chip cookie dough for a refreshing kick of flavor and burst of color. Together, these two layers form the perfect mint chocolate-flavored dessert. So, grab your apron and get ready to make this March 17th the sweetest one yet!

Ingredients

  • 1 pkg. Wooden Spoon® Triple Chocolate Cookie Dough
  • 1 c. butter, softened
  • 1 1/2 c. sugar
  • 3 large eggs
  • 1 tsp. mint extract
  • 10 drops green food coloring
  • 3 1/4 c. flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cream of tartar
  • 1/2 tsp. salt
  • 12 oz. dark chocolate chips

Make It Happen

Step 1

Preheat your oven to 350°F. While it’s preheating, roll out 5 rows of Triple Chocolate Cookie Dough. Once it’s good and flat, press the cookie dough into an even layer in a greased 9 x 13-inch baking pan.

Step 2

Bake for 25 minutes or until the edges are slightly crisp. While this is baking, prepare your second layer.

Step 3

In a stand mixer, combine butter, sugar, eggs, mint extract, and green food coloring. Mix on high until well blended, about 2-3 minutes.

Step 4

Add flour, baking powder, baking soda, cream of tartar, salt, and dark chocolate chips. Turn the mixer on low until the ingredients are just combined.

Step 5

Once the cookie dough is baked and is still warm, spoon the mint chocolate chip cookie dough over the triple chocolate “brownie” layer. Spread the dough evenly over the bottom layer.

Step 6

Bake for an additional 25-30 minutes until the dough is just set. Allow the brookies to cool completely before cutting into bars.

Step 7

Serve at your St. Patrick’s Day bash or whenever you’re looking to add a minty green twist to your favorite chocolate cookies.
