Ingredients
Cookie Cups:
- 24 cubes of Wooden Spoon® Snickerdoodle Cookie Dough
Pumpkin Filling:
- 4 oz. cream cheese, very soft
- 1/2 c. canned pumpkin
- 1/4 c. sugar
- 3/4 tsp. pumpkin pie spice
Topping:
- 1/2 c. cream cheese frosting

Make It Happen
Step 1
Preheat your oven to 325°F. While it is heating, spray 24 mini muffin cups with cooking spray. Place 1 cube of cookie dough in each muffin cup. Bake 13-17 min. or until they turn golden brown.
Step 2
Remove from the oven. Then, take a small melon baller or tablespoon to gently press the center down to create a cup shape.
Step 3
Allow the cookie cups to cool completely in the muffin tin. Once they’re cool, carefully remove them from the tin.
Step 4
In a medium bowl, stir together the ingredients for the pumpkin filling. Mix until well blended.
Step 5
Spoon a rounded tablespoon of the pumpkin filling mixture into each of the cookie cups. Spread it slightly to ensure an even distribution.
Step 6
Fill a small, resealable food storage bag or piping bag with the cream cheese frosting. Cut off a small amount from the tip of the bag. Squeeze a small dollop of frosting onto the center of the top of each cookie cup.
