When it comes to Thanksgiving desserts, pie is a classic that’s hard to beat. So, if you can’t beat it, join it with our recipe for Thanksgiving Pie Cookies! These adorable cookies combine the buttery, chewy goodness of our Macadamia Nut Cookie Dough with vibrant, fall-colored buttercream and M&M “pie fillings”. Top with a lattice of brown frosting, and you have a set of cookies that look just like your favorite fruit pies. Perfect if you want to bring some extra creativity to your table, these cookies will be a hit with both kids and adults alike.

Ingredients

Cookies: 

  • 12 cubes of Wooden Spoon® Macadamia Nut Cookie Dough

 

Buttercream Frosting: 

  • 2 c. unsalted butter, room temp.
  • 1 tbsp. vanilla extract
  • 1 tsp. salt
  • 7 c. powdered sugar, sifted
  • 2 tbsp. heavy cream
  • Red, yellow, orange, and brown gel food coloring


Decorations:

  • M&M candies, separated into piles of red, orange, and yellow

Make It Happen

Step 1

Preheat your oven to 325°F. Break apart 12 cookie dough cubes and place them 2” apart on a greased baking sheet. Bake for about 14 minutes, or until they are golden brown around the edges. Remove from oven and let cool completely on a wire rack.

Step 2

In a large mixing bowl, beat the butter until smooth and creamy. Add 1 tbsp. vanilla extract and 1 tsp. salt and mix until fully incorporated.

Step 3

Gradually, add the powdered sugar, one cup at a time, beating well after each addition. Scrape down the sides of the bowl as needed. Pour in 2 tbsp. heavy cream and continue beating until the frosting is light, fluffy, and easy to spread.

Step 4

Separate the buttercream into four bowls. Add red food coloring to one bowl, orange to another, yellow to the third, and brown to the fourth. Stir well until each frosting is evenly colored. Place each color of buttercream in its own piping bag or resealable food storage bag for easy application.

Step 5

Once the cookies have cooled, frost four cookies with red buttercream, four with yellow buttercream, and four with orange buttercream.

Step 6

Place the red M&Ms on the red-frosted cookies, the yellow M&Ms on the yellow-frosted cookies, and the orange M&Ms on the orange-frosted cookies.

Step 7

Using brown frosting, pipe three vertical lines and three horizontal lines to create a crisscross pattern. This gives them the appearance of a pie lattice. Then, pipe more brown frosting around the edge of the cookie in a decorative pattern to create the pie’s “crust”.
